Matcha Chia pudding with raspberries

Matcha chia pudding with raspberries is a source of energy for a great start to the day. This is a simple and healthy recipe that can be enjoyed for breakfast or when you want a healthy snack or dessert. Both chia and Matcha are full of antioxidants and are both recognized as "superfoods". The recipe can be prepared in advance, perfect for meal planning or a light snack on the go. 

Japanese Matcha tea - SUPERFOOD! A bomb of antioxidants and vitamins! Not only super tasty but also super healthy. Promotes memory and concentration.

INGREDIENTS:

FOR THE PUDDING:

  • 400 ml coconut, almond or other favorite plant-based milk - chilled (best left in the fridge overnight)
  • 2 scoops of maple/agava extract
  • ½ cup chia seeds
  • ½ cup oatmeal (ground)
  • 1 tsp Matcha powder
  • ½ cup of raspberries

FOR SEASONING:

  • raspberries
  • chopped nuts (almonds, walnuts, or other nuts of your choice) 

PREPARATION:

For the green layer:

  1. Mix half the chilled milk, Matcha powder and a teaspoon of maple/agava extract in a blender until smooth. Add the rolled oats and half of the CHIA seeds and mix well with a spoon. Refrigerate for at least 2 hours. stirring occasionally with a spoon (we recommend leaving it overnight).

For the red layer:

2. Mix half of the chilled milk, raspberries and a teaspoon of maple/agava extract in a mixer until smooth. Add the rest of the CHIA seeds and mix well with a spoon. Refrigerate for at least 2 hours. stirring occasionally with a spoon (we recommend leaving it overnight).

3. Divide the green mass into the glasses and the red mass on top of it.

4. Season with berries and ground nuts.

5. Can be stored in the refrigerator for up to 4 days. Delicious!
