Matcha ice cream with avocado

Great tasting Matcha ice cream with avocado. Creamy consistency. Thanks to Matcha powder, the ice cream is rich in vitamin C, trace elements and antioxidants. 

Not only super tasty but also super healthy. 

Matcha is a "superfood". One cup of this drink gives us energy for the whole day. L-theanine in tea increases the concentration of dopamine and serotonin, which causes a relaxing effect, a great mood and a sense of well-being.

INGREDIENTS:

  • 3 ripe avocados
  • 1/2 cup coconut milk
  • 1/4 cup almond milk
  • 1 lime - half for juice, half for decoration
  • 1 tsp Matcha powder (for ceremony or cocktails)
  • 2 tablespoons maple or agave syrup
  • 1/2 tsp vanilla extract (optional)
  • 1/2 cup coarsely chopped pistachios
  • mint leaves for garnish

PREPARATION:

1. Blend peeled avocados, milk, maple syrup and vanilla extract in an electric blender until smooth.

2. Pour the Matcha powder through a sieve and add the juice squeezed from half a lime, mix well. Toput in the freezer.

3. After 30 min. take it out and mix it with a mixer until it becomes a homogeneous thick mass (about 5 minutes). Place back in the freezer. After 30 min. repeat.

2. Place the mass in an airtight container and refrigerate for about 2.5 hours.

3. Place the prepared ice cream in bowls, sprinkle with pistachios and decorate with mint leaves. 

4. Ice cream tastes best soft, so before serving, let the bowls stand for 5 minutes at room temperature.
