Matcha pannacotta with cherry jam

Panna cotta (panna cotta) means "boiled cream" from the Italian language. Matcha panna cotta with cherry jam is a very light and melt-in-the-mouth dessert.

I used Agar-Agar powder (a plant-based gelatin substitute made from red seaweed) for this vegan recipe. It is easy to use because it sets quickly, before the liquid even has time to cool.

Notes: coconut milk has its own sweetness, so you don't need to sweeten the panna cotta layer very much. A few drops of sweet syrup will do. If you use fresh cherries, the jelly layer will be pleasantly sour. If you like sweeter desserts, you can add agave syrup to the cherry layer. 

INGREDIENTS:

PANICATED:

  • 400 ml of coconut milk  
  • 30 ml of warm water
  • 1 tsp Matcha for cooking powder  
  • agave or maple syrup (to taste) 
  • 1 packet of Agar-Agar powder (vegetable thickener)   
  • mint leaves for decoration (optional)

CHERRY JELLY:

  • 150 ml fresh pitted cherries or cherry jam (reserve 50 ml for decoration)
  • 1/2 teaspoon of Agar-Agar powder  
  • 50 ml of hot water  
  • mint leaves for decoration  

PREPARATION:

  • In a small bowl, mix half the coconut milk, Agar-Agar, agave or maple syrup to taste and heat while stirring until it boils and the Agar-Agar is completely dissolved.   
  • Remove from heat, add remaining coconut milk and mix well. Leave to cool. 
  • In a small ceramic bowl, shake well with a bamboo whisk Matcha powder with warm water. If you don't have a bamboo whisk, you can use an electric latte mixer. 
  • Add the matcha mixture to the cooled coconut milk mixture. Mix well.  
  • Pour the prepared mass into glass containers and place in the refrigerator to set (about 2 hours). 
  • Heat 50 ml of water with Agar-Agar powder until the powder is completely dissolved and mix well with cherries or cherry jam (reserve about 50 ml of cherries for decoration).
  • Pour the prepared cherry mass into panna cotta pans. Decorate with annual leaves and leave in the fridge to set. 
  • Delicious!
