Apple cupcakes with Matcha

Apple muffins are a great treat for breakfast or a snack. They are fluffy and simply made. If you are expecting guests, prepare it in advance - it can be stored for up to 3 days in the refrigerator.

It is best that the apple is not sweet. 

INGREDIENTS:

Cupcake batter:

1 glass of flour

¼ cup brown sugar

½ tsp baking powder

1 tsp Matcha powder

1/8 teaspoon of salt

½ cup almond milk (or other plant-based milk)

½ cup of chopped almonds

2 tablespoons butter (or coconut oil)

½ large apple (preferably not sweet)

For the crumb topping:

½ cup of chopped almonds

¼ cup brown sugar

1 tablespoon butter (or coconut oil)

PREPARATION:

  1. Prepare paper cupcake molds and grease them with fat, such as oil.
  2. Preheat the oven to 190 °C (top and bottom).
  3. Mix the dry ingredients (flour, baking powder, sugar, chopped almonds, Matcha powder and salt) in a bowl.
  4. Add the almond milk, melted butter to the dry ingredients and mix well.
  5. Cut the apple into small cubes and add to the dough. Stir to distribute the apple pieces evenly.
  6. Prepare the crumb topping in a bowl - mix brown sugar, chopped almonds and melted butter. Mix it up.
  7. Divide the batter into the muffin tins, filling them almost to the top. Sprinkle with prepared crumbs.
  8. Bake in a preheated oven for 20 minutes. Cooking time may vary depending on the type of oven. Check whether the cupcakes are already baked with a wooden toothpick - when pulled out from the center of the cupcakes, it should be clean, not covered with dough.
