Premium Bancha Fukamushi (深蒸し茶, English deep-steamed tea) is tea treated with steam for a longer time. After Sencha Bancha tea is the most popular of all Japanese teas. It is rich in vitamin C, trace elements and antioxidants, especially catechins, which inhibit cell aging, help our body to maintain youth and protect the cardiovascular system.

What is Fukamushicha?

Fukamushicha (深蒸し茶, deep-steamed tea) is a tea that has been steamed for a long time. This tea processing method is most common in Shizuoka Prefecture.
The leaves are treated with hot steam immediately after picking to stop the oxidation process and maintain a balanced taste, nutrients and bright green color. Usually, the steaming process of green tea takes about 30-40 seconds. In comparison, Asamushicha is steamed for 20-30 seconds and Fukamushicha for 1 minute. or more.
If the leaves are steamed for a longer time, the prefix "Fukamushi" is used in the name of the tea, e.g. Fukamushi Sencha. In Shizuoka Prefecture, Sencha, Gyokuro and Bancha leaves are used for longer steaming.
The final taste of the tea depends on the duration of the steaming process. The main advantage of the Fukamushi process is that the flavor is intensified and the tea has less bitterness. Steamed for a long time, the leaves become softer, which makes them easier to break, and useful substances pass from the leaves to the infusion faster. Brewed tea is darker in color and has more sediment at the bottom. And this is definitely not a disadvantage!

 

Differences between Bancha and Sencha

It is difficult for the average consumer to distinguish between Bancha and Sencha tea.

Grown and produced in the same way as Sencha. One of the differences is the size and texture of the selected leaves. For sencha tea, the leaves are picked only from the higher parts of the bush, where the leaves are softer and softer. Bancha consists of leaves growing lower in the bush, which are thicker and less soft. Also, the leaves for making Bancha tea are picked later, usually the second or third picking. The earlier the picking, the younger, softer and gentler the leaves and the higher the quality of the tea - which is reflected in the price. The first difference is the price. Sencha is always more expensive than Bancha.

Bancha has less caffeine than Sencha and therefore less bitterness. Leaves growing higher receive more direct sunlight and the amount of catechins is higher than leaves growing lower. However, Bancha tea, made from second-picked leaves, has similar catechin content to Sencha.

Catechins also aid in digestion, which is why Bancha tea it is recommended to drink 30 min. after a meal. Due to its mild taste, Bancha goes well with food, especially with dishes such as tempura and seafood.

The prepared tea is greenish-golden in color and has a mild taste.
